The traditional soybean miso is the staple product and the reason for Yoka Miso. Our traditional miso can be described as a rich, authentic Japanese miso paste crafted using time-honored fermentation methods. The texture of our miso has a more rustic feel-it is "chunky" in that we do not blend our miso into a fine paste. Our miso is one of the best emulsifiers out there.

Yoka miso is fermented for a minimum of 7 months and each batch varies in color depending on fermentation time. The miso is also ALIVE. We do not kill off our rice yeast, so it will continue to ferment if you do not stick it in the refrigerator.
