Traditional Soybean Miso $17
The traditional soybean miso is the staple product and the reason for Yoka Miso. Our traditional miso can be described as a rich, authentic Japanese miso paste crafted using time-honored fermentation methods. The texture of our miso has a more rustic feel-it is "chunky" in that we do not blend our miso into a fine paste. Our miso is one of the best emulsifiers out there.
Our miso is fermented for a minimum of 7 months and each batch varies in color depending on fermentation time. The miso is also ALIVE. We do not kill off our rice yeast, so it will continue to ferment if you do not stick it in the refrigerator.
Ingredients: soybeans, koji (rice yeast), salt, water
Garbanzo Bean Miso $16
The garbanzo bean (chickpea) miso paste offers a lighter, sweeter flavor, compared to our traditional soybean miso while still holding the deep umami flavor that miso has to offer. Our garbanzo miso is a Sugiyama Family favorite and is regularly used in their household.
The garbanzo miso is also a great alternative to those who cannot consume soy.
