What is Miso?

Miso (みそor 味噌) is fermented soybean paste. It is made by fermenting soybeans or other beans with salt and kōji (the fungus Aspergillus oryzae) and sometimes rice, barley and other ingredients. 

The fermentation process can range from 6 months to 3 years, sometimes even more. The result of this process is a thick paste used for a variety of purposes such as sauces and marinades, pickling of vegetables, fish, or meats, and adding flavor to soups. You can add miso to ANYTHING! Japan's culinary staple of misoshiru (みそしる or 味噌汁), mixes a basic soup stock, dashi (だし or 出汁) with miso paste. 

Miso is the crown jewel of Japanese cuisine. It is the primary source of complexity in many of the soups and dishes of Japan.

How do I store Yoka Miso?

The best way to store our miso is to take it out of the bag, unwrap it from the parchment paper, transfer it to a reusable container, and pop it in the fridge. Remember to compost our packaging once you've transferred the miso.

How long is Yoka Miso good for?

Great question! It's good for as long as you want it to be good for. Our miso practically never goes bad. Once you put our miso into the fridge, the fermentation process stops. You can keep our miso in your fridge for months, but hopefully you’ll regularly treat your family, friends and self to dishes made with our miso, and it won’t have to sit in your fridge that long (:

Is Yoka Miso Non-GMO?

Yes! All of the beans we use are Non-GMO beans. We work with a variety of farmers in Washington that are all verified non-GMO suppliers.

Is Yoka Miso gluten-free?

Yoka miso is gluten-free.
